  • Preheat oven to 400°F (205°C).
  • Cut up your favorite vegetables (such as broccoli, carrots, and bell peppers) and toss with olive oil, salt, and pepper.
  • Roast in the oven for 20-30 minutes, or until tender and slightly charred.
  • Cook quinoa according to package instructions.
  • Assemble the bowl with the cooked quinoa, roasted vegetables, and any additional toppings you like (such as avocado, feta cheese, and a squeeze of lemon).
  1. Spicy Peanut Noodles
  • Cook your choice of noodles (such as spaghetti or udon) according to package instructions.
  • In a small bowl, mix together peanut butter, soy sauce, rice vinegar, honey, and sriracha sauce to create the sauce.
  • Once the noodles are cooked, drain and add to a large bowl.
  • Pour the sauce over the noodles and toss until well coated.
  • Top with sliced green onions, chopped peanuts, and a sprinkle of red pepper flakes for some extra heat.

  • Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  • Heat oil in a wok or large skillet over high heat.
  • Add the chicken and cook until browned on all sides.

  • In the same pan, stir-fry your choice of vegetables (such as snap peas, mushrooms, and bell peppers) until tender-crisp.
  • Return the chicken to the pan and toss everything together.
