Easy Easter Recipes

Come spring, I’m ready to break out all the bright and sunny recipes to share with the kids. And since the Easter Bunny loves carrots, I use them a lot in my recipes at this time of year because it’s just fun!

I’ve put together my favorite recipes to make in the spring, including ones that work well for brunch, breakfast, snack, and dessert.

I love these Easter recipes for kids since they are easy to make (many take just one bowl), and they embrace the flavors of spring.

Raspberry Lemon Baked Doughnuts

With simple ingredients and fresh flavors, these Raspberry Lemon Baked Doughnuts are a fun breakfast for a holiday…or any day. They’re easy to stir together and have the brightest fruit flavor! (I love these for Mother’s Day, too.)

Raspberry Lemon Baked Doughnuts

These bright and fresh baked donuts have the texture of a cake donut, but with a zing of fresh fruit. I like my Wilton Donut Pan for this recipe, though you can also bake them in a mini muffin pan with the same timing. Adapted from Better Homes & Gardens.

Mini Ricotta Cheesecakes

With just a few simple ingredients and freshness from orange and lemon rind, these Mini Ricotta Cheesecakes are the best. We love them for Easter—we actually eat them for breakfast in my family! Plus: You simply stir the batter together, no fancy equipment needed!

Kids tend to love having their very own little cheesecake, but you can do this batter in a 9-inch graham cracker crust if you prefer. The baking time will be closer to 1 hour.

Mini Carrot Muffins

Packed with carrots, whole grains, and protein, these Carrot Cake Muffins are a delicious way to start the day. They mix up in one bowl, can be made ahead, and are delicious for a snack or breakfast. Plus: You can be eating them in about 25 minutes from when you start! (There are lots of variations for adjusting these for food allergies, too.)

Bacon-and-Egg Cups

This bacon, egg, and cheese muffin recipe is a perfect brunch dish, especially when you have little ones underfoot. You can make the muffin-tin recipe ahead of time and simply reheat when ready to serve and they’ll taste like fresh one-bite frittatas from the oven.

Carrot Cake Oatmeal

Make the easiest Carrot Cake Oatmeal and serve up a dose of veggies for breakfast in a kid-friendly form everyone will love! This is such a great way to start the day with a nutritious breakfast packed with fruits and veggies. It would be so good with fresh spring carrots, too.

Carrot Pancakes

Like carrot cake, only in pancake form, this is a fun breakfast to make for the family. They’re a great option for babies eating finger foods on up to adults!

Healthy Carrot Pancakes (with Yogurt!)

This is a thicker pancake batter due to the carrots and whole grain flours. If you prefer a thinner batter, add a few tablespoons of milk. Heat the oven to 200 F and keep the cooked pancakes warm on a baking sheet while you finish the batch, or serve them up as you go. (Recipe updated with more info on how to make with whole-wheat flour in March 2021.)

Turning a bunch of asparagus into a crazy-delicious (and super easy!) side dish is almost foolproof when you use this straightforward method for how to cook asparagus in the oven.
