When I want a quick and easy kids meal using pantry staples, I often turn to Pizza Quesadillas. These are ready in about 6 minutes, have classic pizza flavor with a soft and easy to chew texture, and are almost endlessly versatile!

I try to keep a minimum of pantry staples on hand so I always have a few meals I can make, even when we’re low on time. And these easy quesadillas are one of the favorites.

All you need is to make them is pizza sauce, cheese, and a tortilla—though you can add other pizza toppings like olives, pepperoni, Parmesan cheese, cooked mushrooms or sausage, and cooked broccoli.

They’re really easy to customize for the kids, work for a quick lunch, and are seriously yummy.

For younger toddlers, you can cut them into thin wedges. Older kids can have them in bigger pieces!

To make this recipe you’ll need:

  • Tortillas: I like fajita size ones best as far as size goes. Flour, whole wheat flour, or a flour-corn blend is usually easiest to work with as opposed to straight corn (which often break or crack more easily).
  • Pizza sauce: Any kind will work, so look near the other pizza supplies at your store. There are usually options in cans and jars. (I personally love the flavor of Rao’s.)
  • Shredded mozzarella: This gives it the classic pizza flavor too.

Ingredient Substitutions

  • You can add in any other cooked pizza toppings the kids like such as cooked sausage, pepperoni, sliced olives, cooked broccoli, or cooked mushrooms. Try to cut the toppings into small pieces so they’re easy to bite into.
  • Use a nondairy shredded mozzarella style cheese if needed.
  • Use a gluten-free tortilla as needed.

  • Place a nonstick or cast iron pan over medium heat. Spread the pizza sauce over one tortilla.
  • Add the cheese to cover evenly.
  • Place into the warmed skillet and top with the second tortilla. Press down a little to make sure that the cheese holds it together.
  • Flip it over and cook to slightly toast the tortilla on the second side.

TIP: I usually serve this with an easy side like cut up fruit, Boiled Green Beans, or even a simple salad.

Place any leftovers into a storage container, seal, and store in the fridge for up to 3 days. Warm on a heat-safe plate for 15-30 seconds in the microwave or on a sheet pan in a 375 degree F oven for about 6 minutes.

Instructions
