Healthy Sweet Potato Pudding

I love the flavor of roasted sweet potato and when paired with thick Greek yogurt, it turns into the best pudding! This Healthy Sweet Potato Pudding is creamy and comforting, and is naturally sweet from the mashed roasted sweet potato. It reminds me of pie filling, but is also a great source of protein, calcium, and vitamin A.

TIP: This sweet potato yogurt works for dessert, of course, but it’s also a great snack or breakfast! You can even top it with crushed up granola.

To make this simple and healthy dessert or snack, all you need:

I like to use vanilla Greek yogurt from Siggis, which has great flavor but not a ton of added sugar, but you can use any brand you like as well. If you’d rather use plain Greek yogurt, that’s fine too—just sweeten to taste with a little maple syrup.

TIP: You can top it with a little sprinkle of pumpkin pie spice or cinnamon.

Can I make this dairy-free?

You can swap in your favorite non-dairy yogurt, though a thicker Greek-style one will work better for the consistency.

Here’s a look at the process of making this simple and healthy Sweet Potato Pudding. I recommend making the sweet potato ahead of time so this part is easy and quick t’s so easy.

  1. Add the ingredients to a standard blender and blend smooth or use an immersion blender.
  2. Serve cold.

TIP: I like to make my sweet potato ahead in the crockpot and stash it in the fridge until I’m ready to make the pudding.

How long does this pudding store in the fridge?

You can store any leftovers (or simply make this ahead) in the fridge for 3-5 days in an airtight container. Stir together well before serving if any water separates, which could happen from either the sweet potato or the yogurt.

What’s the best sweet potato to use in this recipe?

I like to use roasted sweet potatoes in the crock pot. Or use my Sweet Potato Baby Food. You can do that step a few days ahead and then blend this up in no time at all.

Can I serve this sweet potato yogurt recipe to a baby?

If you make this with plain Greek yogurt instead of the vanilla (which will have some added sugar), this is a great meal option for a baby. I made this a lot for my kids when they were babies!
